Exquisite Indian Vegetarian

Indian cuisine is known for its immense variety of vegetables, combined with aromatic spices to create delicious and elegant Indian vegetarian dishes. In this class, we take advantage of our growing season wherever we can, to incorporate local produce into our menu, which includes-Vegetable Korma, a North Indian specialty of carrots, mushrooms, zucchinis and peppers immersed in a nutty cream sauce of fragrant spices and yogurt; Saag Paneer, creamy Indian cheese cubes cooked with spinach greens; Potato, Onion & Okra Dry Curry; Basmati Mushroom Pullao; and Flaky Paranthas. For dessert we'll serve Gajjar Ka Halwa, a delicious, warm carrot sweetmeat with cardamom and nuts and Vanilla Chai Ice Cream. Absolutely exquisite!

Curries, Curries and More Curries!

Not all curries are create equal and depending on the style or region, different techniques are used to make an authentic Indian curry. This advanced Indian class covers delicious curries from across India, perfect to warm up your winter menus. First up is Lamb Korma, a north Indian lamb curry immersed in a nutty cream sauce of fragrant spices and yogurt. Next is Madras Chicken Curry made with aromatic spices, mustard seeds and chili for those who like it hot! Then follows a delicious, savoury velvety smooth Garam Masala Egg Curry and finally Bombay Potatoes with Green Bean to round out this delicious selection of curries. A basmati rice, flatbread, dessert and cool drink will be served with this meal. If you’re interested in learning to make your curries using fresh ingredients, this class is for you. A healthier alternative, you’ll never need your “curry paste” again!

North Meets South

In this class, the rich and creamy cuisine of north India meets the fiery cuisine of the south. From the north, we'll make Birayni, a north Indian layered rice dish of boneless chicken marinated in yogurt and aromatic spices. Famous from the south comes Chicken Vindaloo, morsels of chicken simmered in a sweet, sour and hot sauce, tempered with curry leaves. North Indian garlic naan, a southern sweet & sour cabbage and carrot salad and a banana ginger chai dessert served with coconut ice cream rounds out this delicious meal. Cross the sub-continent in this adventurous class!

This two-day intensive workshop & walking tour takes you on a delicious journey through Indian cuisine, emphasizing fundamental cooking techniques, delving deeper to uncover more about special Indian ingredients, culinary traditions and culture.

Day one is the practical One Day Intensive Workshop, interactive cooking class, where you'll learn all about spices, techniques to make authentic delicious, appetizers, curries, flatbread from scratch and the perfect basmati rice  and all the rest to make a full Indian menu.

Our menu includes, a dry Channa Masala with vegetables spiced with tandoori masala drizzled with garlic yogurt raita, Vegetable Kofta Curry (vegetable and lentils balls) simmered in a creamy, mouth-watering Makhani Sauce, Handmade Garlic Cilantro Sesame Naan bread made from scratch and basmati Rice Pullao.
